Spicy Pumpkin Bars
(Recipe from bettycrocker.com)

Makes 48 bars


2 cups Gold Medal all-purpose flour
1 1/2 cups packed brown sugar
2 tsp baking powder
1 tsp baking soda
2 tsp pumpkin pie spice
1/4 tsp salt
1/2 cup vegetable oil
1/2 cup apple juice
1 can (15 oz) pumpkin (not pumpkin pie mix)
2 eggs

1 container (16 oz) Betty Crocker Rich & Creamy cream cheese frosting (or you can make your own!)


1. Heat oven to 350 degrees F. Grease 15x10x1-inch pan with shortening; lightly flour. In large bowl with electric mixer, beat bar ingredients on low speed until moistened. Beat 2 minutes on medium speed. Spread batter in pan.

2. Bake 20-30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.

3. Spread frosting over cooled bars. Refrigerate until set, about 30 minutes. To add little more Halloween flair, I added Reeses Pieces to the top of the bars, and then cut them into squares. Store in refrigerator.
